Rustic Pecan Brandy Cake

Live Like N Pecan Brandy Cake

Ingredients

  • 1 cup LIVE LIKE N Pecan Oil
  • 2 tbsp LIVE LIKE N Olive Oil
  • 3/4 cup sugar
  • 3 eggs
  • 2 tsp vanilla extract
  • 1 tbsp brandy
  • 1 tsp ground cinnamon
  • 2 cups self raising flour
  • 1 heaped tsp baking powder
  • pinch of salt
  • 2 tbsp desiccated coconut
  • finely grated zest of 1 orange
  • 100g pecan nuts, finely chopped

Instructions

Whisk oils and sugar together in mixing bowl
Whisk in eggs
Add vanilla, brandy and cinnamon and whisk
Add flour, baking powder and salt and mix until smooth
Fold in coconut, orange zest and pecan nuts
Line bottom of 22cm non-stick springform pan with baking paper
Spoon batter into pan, smooth top
Bake in oven at 170˚C until golden brown, about 35 minutes
Pour hot brandy syrup over cake as soon as it comes out of the oven
Let cool in pan
Serve with slightly sweetened mascarpone or Greek yoghurt

(Or drizzle slices of cake with Champagne!)

Brandy Syrup

  • 5 tbsp brandy
  • 5 tbsp orange juice
  • 3 tbsp water
  • 4 tbsp sugar

Instructions

Heat ingredients in saucepan just before cake comes out of the oven
Stir until sugar has dissolved and liquid just starts to bubble
