Pumpkin Seed & Parsley Pesto


Ingredients
- 1/2 cup pumpkin seeds, coarsely chopped
- 1 cup fresh parsley, coarsely chopped
- 1/2 cup fresh basil leaves
- 2 garlic cloves, chopped
- 40g Parmesan, grated
- 1/2 cup + 1 tbspĀ LIVE LIKE N Olive Oil
- 2 tsp LIVE LIKE N Chilli Grapeseed Oil (optional)
- 1/4 tsp sea salt
- 1/4 tsp freshly ground black pepper
Instructions
Place pumpkin seeds, parsley, basil, garlic and Parmesan into food processor
Pulse a few times until ingredients are finely chopped and mixed
Season with salt and pepper
Add olive oil slowly while food processor runs at a low speed
Add chilli oil for a gentle kick
Cover and store in refrigerator
Serve with crostini, roasted vegetables, pasta or salads
