Cranberry, White Chocolate and Herb Cookies
Ingredients
- 1/2 cup plus 1 tbsp LIVE LIKE N Grapeseed Oil oil
- 3/4 cup light brown sugar
- 2 eggs
- 2 tsp vanilla extract
- 2 cups plus 1 tbsp selfraising flour
- 1 tsp baking powder
- pinch of salt
- 1/2 cup raw oats
- 100g dried cranberries, chopped
- 80g white chocolate, chopped
- 2 tsp finely chopped fresh rosemary
- 2 tsp finely chopped fresh thyme
Instructions
Whisk oil, sugar, eggs and vanilla together in a mixing bowl
Add flour, baking powder and salt, mix until smooth
Mix in oats
Add cranberries and white chocolate, mix until just combined
Mix in chopped herbs
Line oven tray with baking paper
Spoon heaped teaspoons of batter onto baking paper, 8 at a time
Bake in oven at 170˚C (fan) until golden, about 9 minutes
Remove from oven and let stand for 5 minutes
Carefully transfer cookies onto cooling rack and let cool completely
